In 1853, President Fillmore commissioned Commodore Matthew Perry to embark on a yearlong journey to Japan. His mission was to reach the shores of Japan and open the country to American trade. Mr. Moto, a gourmand and art connoisseur, traveled alongside Commodore Perry aboard his flagship, the USS Susquehanna. Throughout Mr. Moto’s voyage, he documented his most profound discoveries, including the treasure of Japanese gastronomy.
At his Residence, Mr. Moto discovered solace in timeless Japanese homecooked recipes. Home is not merely a place; it is an emotion—a warm, comforting embrace that nourishes both body and soul. The centerpiece of this experience is the kaisendon (海鮮丼), a vibrant seafood bowl. As customary of Japanese cuisine, the meal ends with Mr. Moto’s signature ochazuke—a soul-stirring broth that is simmered for over 60 hours and infused with the essence of every fish prepared for the meal.
